Observation (CORRECTED DURING INSPECTION): Concentration of quaternary ammonium compound (QUATS) sanitizer was at approximately 50-100 ppm in all sanitizing pails at time of inspection. Dispenser only released 100 ppm QUATS.
Corrective Action(s): QUATS dispenser was adjusted and run for a period of time, and reached 200 ppm QUATS according to the supplier's test strips. It is essential that your QUATS sanitizer maintains 200 ppm (or as per manufacturer's specifications) to ensure that pathogens that could cause foodborne illnses are removed from food contact surfaces.

Observation: The position of the taps at the hand wash station at the front-of-house servery is misconfigured. It is difficult to turn the hot water faucet past a certain point, resulting in a slower stream of water.
Corrective Action(s): Re-adjust the starting position of the taps so that the hot and cold water taps can be fully rotated.

Comments

Routine inspection conducted. Sanitary condition of premise complies with health requirements. The following observations were noted during the inspection:

1. Temperatures
- Walk-in cooler at 4C
- Walk-in freezer compartment at -18C
- Prep cooler maintained at 4C
- Cooler inserts (pull-out) all at 4C or less
- Undercounter coolers along cook line at 4C or less
- Keg walk-in cooler at 3C
- Bar undercounter cooler at 3C
- Hot-held gravy units maintained at greater than 60C
- Temperature logs were maintained and up-to-date as of January 21, 2020
- Cooler units equipped with thermometers

2. Hygiene and Sanitizing
- Hand wash stations all adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in restrooms and all food service areas
- Food contact surfaces (cutting boards, knives) all maintained in good sanitary condition
- Low-temperature dishwasher sanitizes with 100 ppm chlorine residual [final rinse at the plate]
- Low-temperature iodine-based glasswasher releases 25 ppm iodophor at the final rinse cycle
- Ventilation canopy well maintained - no grease or residues noted
- Ice machine up-kept in good sanitary condition
- Staff restroom in sanitary condition

3. Storage Practices
- Raw products stored underneath cooked and ready-to-eat products
- Separate colour-coded tongs are used for cooked meats and raw meats, and are stored on ice
- Organization of walk-in cooler meets health requirements. All food products stored at least 6" off the floor
- All ingredients inside cooler units were individually wrapped, sauces inside of the walk-in cooler present in plastic containers with tight-fitted lids
- Dry storage area is organized - food-grade bins present for all dry products with scoops suspended inside

4. Pest Control
- No evidence of recent, visible pest activity was noted at time of inspection
- Professional pest control company conducts routine audits. Follow the recommendations specified in the report as part of your integrated pest control programme
- Back door is tightly shut when not in use, door sweep present to prevent pest entry underneath

5. Administrative
- Permit posted and up-to-date
- Cook on-site has FoodSafe 1
