NOTE: Ensure to hire a professional grease trap cleaner to clean out the grease trap located in the back kitchen area in the ground where the storage shelves are located. Please send an invoice to then health inspector after cleaning has been completed.
- All coolers operational at 4C or below
- All freezers operational at -18C or below
- Hot holding at 60C or above
- Thermometers in place for temperature monitoring
- High temperature dishwasher final rinse temperature measured at 76.7C at plate level
- Quats sanitizer available in spray bottles measured at 200 ppm
- Chemicals are stored appropriately away from food/food contact surfaces
- Food storage are in food grade containers, covered, and 6" off the floor
- Ice machine and ice box is maintained in sanitary conditions
