Observation (CORRECTED DURING INSPECTION): Staff member explained how they manually wash dishes. The final sanitizing step was not mentioned.

Ensure that hot pies coming out of the oven for hot holding are also being probed with a thermometer to ensure that they reach an internal temperature of 74 degrees C. before being placed in the warmer. The reheating temperature and hot holding temperature must also be recorded along with fridge and freezer temps.
Pies are currently being hot held at 60 degrees Celsius. Good.
All fridges are maintaining foods at 4 degrees Celsius or colder.
All freezers are -18 degrees Celsius or colder.General sanitiation is overall good.
Bleach water bottle measured a greater than 200 PPM chlorine residual. Reduce to 100 PPM chlorine residual as per signage.
General sanitation is overall good.
