- Operator provide catering services primarily for private events; however, may cater public events in addition. Initially, Operator planned to cater business brunch/lunch, but has not yet begun.
- Hourly in membership in place with YVR Prep. Time is booked based on needs/events.
- Dry storage space leased for storage of equipment, utensils, catering trays, dry goods. Lease of dry storage space must be maintained and access to walk-in cooler as part of ongoing approval.
- Access to refrigerated storage available when time is booked. Operator purchases potentially hazardous items/perishables immediately prior to time kitchen is used.
- Operator has food safety procedures in place.
- Transportation of food is in cambro units (with ice plate or hot plate)
- Delivery radius is within 30min of commissary kitchen
- Operator has probe thermometer to check cooking, cooling and holding temperatures of foods.
- Operator holds valid Foodsafe level 1 certificate (Valid until Oct 2023)
- For large functions, Operator rents chafing dishes, hotel pans, dishes, and utensils.
Premises:
- Handsinks supplied with hot and cold running water, liquid soap and paper towel
- High temperature dishwasher final rinse measured 78C at dish surface which is sufficient to sanitize dishes
- Quats sanitizer present for sanitizing dishes
- Walk-in cooler was at 4C |
