Observation (CORRECTED DURING INSPECTION): Handwash sink near the dishwashing area was out of paper towels. Manager restocked the handwash sink at the time of inspection.
Corrective Action(s): Ensure that all handwash sink are available to staff and have adequate supply of hot and cold running water, liquid soap and single use paper towels.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Ice scoops (x2) were stored directly in the ice machine.
2. Scoop was observed in the flour bin.
Leaving scoops (handles) in direct contact with food could result in potential food contamination during food handling. Staff removed scoops out of the bin and ice machine and stored them outside.
Corrective Action(s): To prevent food from contamination, always use scoop with handles and store them outside the bin/ice machine in a sanitary manner.

304 - Premises not free of pests [s. 26(a)]
Observation: Flies were noted near the dishwashing area and in the front near garbage disposal. Fly trap was in place.
Corrective Action(s): Please notify your pest control company and implement the appropriate control measures such as:
- Using lids to garbage bins.
- Regular cleaning and preventing accumulation of dirt/grease in the facility.
- Keeping the doors closed.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Back storage area as well as area behind the front counter was cluttered.
2. Vents right above the flat grill had thick grease and oil accumulation. Service was due in June 2023.
3. General sanitation of the facility requires improvement.
Corrective Action(s): 1. De-clutter and reorganize these areas for regular cleaning and to prevent accumulation of dirt.
2. Please service the ventilation canopy and ensure that it is maintained in good sanitary condition.
3. Have designated area for food storage, garbage disposal, storing non-essential stuff and any equipment not in use and planned to be taken offsite.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Temperature of coolers recorded at or below 4C
- Hot holding units including fried chicken and butter chicken sauce recorded above 60C
- Freezer recorded at -11C

Sanitation & Maintenance:
- Hand wash station in the front service area was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
See violation above
- Sanitizer spray bottle available and the concentration of bleach noted at 200ppm.
- Low temp mechanical dishwasher available and 50ppm chlorine residual noted during rinse cycle.
- 2 compartment sink in place.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate (Exp Jun 2, 2027)

Note: Few equipment were stored in back area such as ice machine, rice cooker which are not in use. Any equipment not intended for facility operation should be stored offsite.
