Observation: Upper part of main pizza prep cooler had foods stored at 7.3-8.7'C. Food items were placed in the unit less than 30 minutes prior to the inspection. Staff had adjusted the temperature knob at this time. Operator had advised that the technician had already been contacted for service. OK.
Corrective Action(s): Ensure to have the cooler repaired. Until then, continue to place small amount of food in each container, so that each will be used up within 2 hours as agreed at this time.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed from floor underneath storage shelving unit in the right corner in the back storage room. Traps have been placed in all corners/floors throughout.
Corrective Action(s): Ensure to monitor for droppings every morning and throughout the day. Remove droppings and clean the affected area using >1000ppm chlorine solution.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Minor leaks observed from the dishwasher. The grey water collecting tray taped on the side temporarily to prevent the grey water from leaking. Operator had called for service.
2) Upper part of the main pizza prep cooler requires a service. Technician is coming in today. OK.
Corrective Action(s): 1) Ensure the tray is replaced. Mop the floor under the dishwasher.
2) Ensure the unit is repaired so that the upper part is operating at or below 4'C.

Routine inspection conducted:

-Handwash stations adequately supplied.
-Coolers operating at/below required temperature of 4'C; Freezers operating at/below required temperature of -18'C.
-Thermometers available for temperature monitoring.
-General food storage practice very good. All contained in / covered with food grade materials.
-200ppm chlorine solution available in a labelled bucket to hold wiping cloths.
-Coffee wanrds wiped with chlorine sanitizer after use.
-Low temperature dishwasher achieved minimum level of >50ppm chlorine at the plate level after final rinse.
-Ventilation canopy hood serviced and maintained. Next service in Sep 2019.
-Back storage areas satisfactory. Washroom handsink satisfactory.
-Traps in place. Professional pest control company had its initial visit 3 days ago. Kwality Pest Control. Ensure to keep the report on site when received.
-General sanitation of the facility good at this time.
