Observation (CORRECTED DURING INSPECTION): Observed bucket of paneer stored in water at room temperature measured at 14C internal temperature. Observed bucket of rice measured at 6.4C internal temperature in the rice cooker. Operator informed that they keep it up in the rice cooker and will reheat in microwave when customer order. Rice and panner that was out at room temperature for an hour. Tartar sauce observed to measure 16.4C internal temperature in the preparation cooler next to the front enterance to the kitchen.
Corrective Action(s): Store paneer and rice in the cooling unit able to hold and air ambient temperature of 4C or lower. Discard the tartar sauce.

Observation (CORRECTED DURING INSPECTION): Operator informed that large pots and pans unable to wash through the dishwasher is washed with detergent and water. Dining room tables observed to be sanitized with non-food grade QUATs solution.
Corrective Action(s): All kitchen equipment, utensils, dishes, food contact surfaces must be washed, rinsed, sanitized, and air dry. Prepare bleach spray solution measured at 100-200ppm chlorine for use to sanitize large pots and pans after washing with detergent and water. Use bleach solution measured between 100-200ppm chlorine or use food-grade QUATs based solution to sanitize the dining tables.

Exhaust vent hood observed to have built-up of grease. Review and follow facility's Sanitation Plan on daily cleaning of facility. No sticker displayed on exhaust hood to indicate next service date.
Corrective Action(s): Clean and sanitize the shelving racks and seams of the preparation cooler and underneath the shelving racks of the walk-in cooler. Remove and sanitize the walk-in freezer to remove built-up of ice. Clean and sanitize the exhaust vent hood to remove built-up of grease. Corrected by: June 8, 2022.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
Walk-in cooler, stand-up coolers, undercounter cooler, preparation cooler measured at 4C or lower. Walk-in freezer measured at -18C.

Updated floorplan received. Premises in accordance to the updated floorplan submitted. Note that back dry storage area is for dry storage only and is not for food preparation.
