304 - Premises not free of pests [s. 26(a)] Observation: Mouse activity noted in multiple areas of kitchen. Snap traps set in multiple areas of kitchen. One mouse observed in trap. Corrective Action(s): Clean and remove all mouse droppings from kitchen floor, including those hard to reach areas behind shelves, dishwasher and grill. Identify points of entry (chewed baseboards or insulation or other) and block off accordingly and with assistance of Pest Control Tech. if necessary. Violation Score: 9

Comments

Mouse activity seems to have increased. Clean up all mouse droppings and any chewed baseboard and continue to block off mouse entry points as discussed. Recommend adding a door flange to deter entry under door to kitchen. The rest is most likely using the plumbing and electrical conduits at the entry points to the walls. Tested bleach solution at 50 ppm in dish sink. Recommend increasing the bleach concentration to ensure 100 ppm is available for last set of dishes or drain and fill sanitize sink after each dish run to ensure proper residuals are maintained through lunch. Cooling units good. 4 c or less. freezers good. -18 C. handwash stations stocked. dishwasher at 75 C at plate. General sanitation is good.
