Observation (CORRECTED DURING INSPECTION): The following items were discarded by the manager due to time (>4 hours) and temperature abuse:
- Wraps x 3, internal temperature 8.6C-8.8C.
- Sandwiches x 5, internal temperature 7.8-10.2C.
- Avo smash x 1, internal temperature 8.6C

Other potentially hazardous foods in the display cooler is relocated to a working cooler.

Observation: The paper towel dispenser in the back kitchen hand washing station was not operational. The manager placed a roll of single use paper towel near the hand washing station at this time. Service the paper towel dispenser or provide an alternative method to hold paper towels.

Observation: The display cooler's (storing ready-to-eat products) ambient temperature was measrued at ~9C. All potentially hazardous foods (PHFs) were relocated to a working cooler at this time.
Corrective Action(s): Service the cooler to maintain PHFs at or below 4C at all time. Do not use the display cooler to store any PHFs until the cooler is serviced and verified by the district health inspector.

Routine inspection conducted:
(After correction) Both hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
(See violation 308 for an exception) All coolers measured at 4C or less.
Freezers at adequate temperature.
High temperature dishwasher's sanitizing cycle measured at 71C at the plate level after three cycles (first two cycle temperature: 69.2C and 68.1C). Please ensure to run few cycles in the morning so that the dishwasher is primed with proper temperature.
Food contact surface sanitizer was measured at 200 ppm QUATs as per test strips.
Ice machine is in a sanitary condition.
No sign of recent pest activity noted at this time.
General sanitation is adequate.
