Observation (CORRECTED DURING INSPECTION): Soup warmer (soup/hollandaise sauce) measured at ~50'C. As per chef, unit was lowered down about an hour prior to the inspection, just after lunch rush. Unit was adjusted back to above 60'C at this time.
Corrective Action(s): Do not lower the temperature of the unit below 60'C as reiterated at this time. Any hot potentially hazardous food stored below 60'C for more than 2 hours must be discarded.

Comments

Routine inspection conducted:

- Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at -18'C.
- Temperature monitoring system in place.
- Cooked food hot held on griddle above 60'C.
- 200ppm Quats available in labelled spray bottles throughout.
- Low temperature achieved minimum chlorine level of 50ppm at plate level after final rinse.
- Ice machine satisfactory. Scoop stored in proper manner.
- Front servery satisfactory. Dipper well in use for scoops.
- Washroom handsinks satisfactory.

NOTE: Smartpower in use for disinfection of dining tables only. Automated dispenser currently not dispensing correct concentration and to be serviced. Facility to use 200ppm Quats to disinfect dining tables for now.

General sanitation of the facility satisfactory but could be improved by cleaning hard to reach areas on a more regular basis.
