Observation (CORRECTED DURING INSPECTION): Walk-in cooler at ambient temperature of 11C. Door was wide open at time of inspection.
1. Approximately 100g of cooked chicken pieces from last night were present at an internal temperature of 11C.
2. 6-7 kg of garlic oil mix at an ambient temperature of 12C
Corrective Action(s): 1. The cooked chicken pieces were discarded at time of inspection.
2. Garlic oil mix was discarded.

Ensure that all potentially hazardous foods are kept in a cooler that is able to maintain 4C. Do not leave cooler doors open for prolonged periods of time.

Observation (CORRECTED DURING INSPECTION): Back door left wide open. Screen door was also open and was visibly damaged at time of inspection.
Corrective Action(s): Back door was shut. Do not leave the back door open when not in use, as this can allow for pests such as rodents to enter the premise. If you wish to leave the back door open, you must repair the screen door.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Ventilation canopy still contains significant amounts of grease, and area behind freezer still contains food debris identified from the last inspection.
Corrective Action(s): Thoroughly clean and degrease the ventilation canopy, and remove the debris behind the freezer. Ensure that your premise is maintained in sanitary condition.

Observation: Walk-in cooler at an ambient temperature of 11-13C. Temperature did not drop throughout course of follow-up inspection.
Corrective Action(s): Adjust the walk-in cooler so that it maintains a constant temperature of 4C or less. Do not put any potentially hazardous foods in the cooler such as meats, dairy products, garlic oil until a follow-up inspection has been conducted.

Follow-up to routine conducted on June 12, 2018 (RPT#: JMAA-AZNSH3).

- Some cleaning was conducted since the previous inspection, including debris behind the cooler. However, there are some outstanding issues that need to be addressed before the next inspection (see violation code above).
- Prep cooler has been serviced and is now at 4C

A follow-up inspection will occur on June 25. Additional repeated infractions will result in the issuance of a correction order.
