Observation: 1) Sprouts and a box of spring roll wrappers were stored on the floor in the walk-in cooler.
2) Scoops were stored inside dry ingredient containers (handles were in contact with the ingredients).
Corrective Action(s): 1) Foods must be stored off the ground and protected from potential contamination.
2) Ensure scoops are stored in a manner which prevents potential contamination of foods.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Front service cooler was at 4C.
-Upright freezers were at -15C/-16C.
-Chest freezer was at -22C.
-Hot holding was greater than 60C. Food items were reheated to greater than 74C prior to hot holding.
-Shrimp was cooked to greater than 71C.
-Cooked foods rapidly cooled to less than or equal to 4C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Handwash station shared with 2-compartment sink supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail was tested at 100ppm.
-Raw meats stored below ready-to-eat foods.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station equipped with liquid hand soap and single use paper towels.
