203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1 insert of cooked meat was at 33C. Insert was approximately 20cm deep and the insert was covered trapping all the steam inside the container. This is a continuing deficiency. Operator initially stated the meat was just cooked and then said it was cooked and cooled in the walk-in freezer before placing items into insert. Operator also stated the items will be re-cooked.
Corrective Action(s): All potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Regardless of whether or not the food item will be re-cooked, it must still be stored above 60C or below 4C or cooled rapidly as discussed above. Items were placed on a metal tray for cooling in the freezer at the time of inspection.

Observation: Ice machine is still leaking water. This is a continuing deficiency. Operator states he has contacted service. A cardboard box with a garbage bag is currently being used to collect the water. Operator stated the leak is minor – cardboard box has overflowed, allowing for water to pond on the floor.
Corrective Action(s): Service ice machine immediately and repair leak. Standing water is a slipping hazard and can allow for the growth of pathogens.

Comments

-Follow-up inspection to Nov 9, 2017.
-Operator is now placing a paper liner on top of tomato boxes before using to contact foods.
-Chemicals were stored separately from food items at the time of inspection.
-Operator continues to improperly cool potentially hazardous foods items. This is a continually re-occurring deficiency in this facility.
