Corrective Action(s): Have pest control service for flies more frequently if needed. Ensure aprons are regularly laundered and that dirty laundry is kept away from food preparation areas. Also ensure all surfaces are clean and free of food debris at the end of each day.

Comments

- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available at 200 ppm in spray bottles and at three-compartment sinks. Test strips available for use.
- Three-compartment sinks were maintained in sanitary conditions, sink drain plugs available.
- Raw meat and seafood cooler, cooked product cooler, walk-in cooler, and display coolers were measured at 4C or colder.
- Freezers maintained at -18C or colder.
- Temperature records available. **Today's temperature records for the seafood department have not been completed yet. Missing morning records at the time of inspection.
- Processing room ambient air temperature maintained at 4C.
- General sanitation satisfactory at time of inspection, except for at the meat hand wash station in the front area. See violation code 306 above.
- Food storage practices satisfactory
- Fly activity noted in meat department at time of inspection. See violation code 304 above.
