Observation: Main meat prep cooler measured 12 - 14 C in inserts and at base. Not holding temperature. Toppings prep cooler is ok.
Corrective Action(s): Immediately place meat inserts on ice or keep in alternate cooler to ensure they keep food below 4 C. Have unit looked at and serviced by technician. Keep records of cooler temperatures. This should be ongoing, not just because of issues noted with this cooling unit.
