Observation (CORRECTED DURING INSPECTION): More than 15 packs of already thawed prawns left at room temperature. Staff was advised to leave a few packs that were to be used within the next 15-30min and place the rest in the cooler at this time.
Corrective Action(s): Ensure all cold potentially hazardous food are stored in cooler at 4'C or below at all times. Take small amount out each time.

Observation: 1) Pre-portioned miso soup condiments stacked on top of another in the front cooler.
2) One of the rice scoops stored in stagnant water.
Corrective Action(s): Ensure to lay them on a tray and cover with saran wrap before stacking another layer above. Do not let food come in direct contact with the bottom of another bowl.

Ensure to have the rice scoop stored in ice water.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Accumulation of food debris and garbage observed from floors throughout the kitchen, especially underneath large kitchen equipment (i.e. stand up coolers/freezers) and back prep area.

Corrective Action(s): Ensure to have all floors cleaned on a more regular basis. [CORRECT BY: Friday, Mar 25]

Comments

Routine inspection conducted:

- Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; freezers operating at/below -18'C.
- Hot-holding units operating above 60'C.
- Thermometers in place for temperature monitoring.
- Sushi rice had pH measured at 4.0.
- Ice scoop stored in proper manner.
- High temperature dishwasher achieved 71.1'C at the plate level after final rinse.
- 100-200ppm chlorine solution available in buckets to hold wiping cloths as well as in labelled spray bottles.
- Professional pest control company contracted. Traps in place. No evidence of pest activity observed at this time.
- Washrooms satisfactory.

NOTE: Ensure to keep the back door closed at all times.
