Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Plastic boards covering pizza dough in pans for proofing have grooves and edges that are moldy with black residue.
Correction: Clean and sanitize with chlorine sanitizer, which is available on site.
Or replace with boards that are designed for food contact, that are more durable, easily cleanable and non-porous.
Operator said that new boards are on order.

Operator installed new screens at the front and at the back.
Operator installed new fans for ventilation.
No signs of flies. Great job.

Pizza boards for proofing:
Operator said they sanitize daily and also now deep clean every Sunday with soap and water, scrub down and then bleach the boards.
Boards on the shelves still have some black residue inside the holes along the edges.
Boards that are used for proofing inside the coolers have less residue and appear cleaner.
Please continue to clean and sanitize daily and per your cleaning plan. Replace boards in poor condition, as necessary.
