Routine inspection

- Hand washing stations fully supplied. Staff hand washing and proper hand hygiene noted during this inspection. Proper usage of single use gloves observed.
- Walk in cooler measured at or below 4 degree C.
- Walk in freezer measured at -21 C. Food stored off the floor inside this unit.

- All other cooling units measured at or below 4C.
- Ice cream freezer measured at -17C. Temperature monitoring log kept updated.
- Hot holding table measured at or above 60C. Upright hot holding oven measured at 72C at the time of inspection.
- Bread freezer downstairs measured at -19C.

General sanitation is overall great! Thank you!
- Floor noted clean and free of food crumbs, dust and debris. No sign of pest activity observed at this date.
- Oven Range, hood vent and ovens noted clean and maintained. Grill observed clean and well maintained.
- Back splashes noted clean and free of food splatters.
- Dishwasher wash cycle registered at 126F and rinse cycle had 50ppm chlorine residue.
- Garbage management noted very well done.
- Dry storage was clean and food stored in pest proof containers off the floor.
- QUAT sanitizer 200-400 ppm available in sani-buckets and spray bottles. Chemical storage noted organize and well maintained.
Staff observed properly handling washed cutlery, dishes and setting tables.

Reminder:
- - Sandwich cooler were being repaired at the time of this inspection. Monitor sandwich cooler temperature and ensure it reaches 4 degree C before storing food in the unit. Ensure to monitor food temperature after the unit is restored. Keep records. Do not store food until minimum required temperature is reached.
- - A door hinge noted with rust inside walk in cooler. Ensure to repair or replace.
