Observation (CORRECTED DURING INSPECTION): Foods observed being kept out at room temperature.
Corrective Action(s): After lunch rush, move all foods inside the cooler.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation: The hot holding unit doors were wide open. The temperature dial of the lower units were turned down low. There were chicken and pork still inside the warmer. The temperature of the meats were around 45 degC. The temperature of the meats inside the warmer MUST be at least 60 degC.
Corrective Action(s): Do not leave the doors of the display warmer open. Keep it closed at all times. If you're cooling the meats, then turn the unit off and take the meats out so that it cools down faster. Keep it out for an hour (2 hrs max) and then move it to a cooler.

Observation: Cooked rice containers are not being washed! This is NOT acceptable.
Corrective Action(s): After each use, the rice containers MUST be washed in the dishwasher before being used for serving rice to the next customer.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher rinse temperature after 5 tries was still 69 degC. This is close but not high enough.
Corrective Action(s): Get the dishwasher repaired. It must maintain a rinse temperature of at least 71 degC at the plate level.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Several areas of the kitchen require cleaning.
Corrective Action(s): Shelves in dry storage room in the back of the kitchen, walls, cupboards around the 2 compartment sinks, under the dishpit, under shelving in the vegetable walk-in cooler, walls of the back walk-in cooler where the ducks are hanging. Clean the build up in the tanks as well.

Observation: Rice cooker handle is broken and being held together with duct tape.
Corrective Action(s): Fix the handle or replace the rice cooker.

Observation: 1) The floor mat in the dishpit area is worn out and being held together by plastic.
2) Some of the ceiling tiles are peeling in the kitchen.
3) Shelving in the vegetable walk-in cooler is severely rusted.
4) The caulking at the front hand sink and at the dishpit must be replaced.
Corrective Action(s): 1) Replace the floor mat.
2) Replace the ceiling tiles. Make sure the new ceiling tiles are of the washable kind i.e. smooth, non-absorbent and easy to clean.
3) Replace the shelving in the walk-in cooler as discussed.
4) Replace the caulking as discussed.
