Hand wash stations equipped with liquid soap and paper towels.
Quats sanitizer measured 200 ppm.
Walk-in cooler was at 1-3 deg C.
Meat cooler was at 2-3 deg C and processing room was at 4 deg C.
Display coolers were at 3-4 deg C.
Freezers were at -12 to -16 deg C.
Sausage making done in-house.
General sanitation was satisfactory.
