Observation (CORRECTED DURING INSPECTION): Back handwashing sink next to the 2-compartment sink observed to be obstructed with trolley and in the basin had steel wool.
Corrective Action(s): Ensure all handwashing sinks are well equipped with hot and cold running water, liquid soap, and paper towels at all times. All handwashing sinks must be unobstructed to ensure proper hand hygiene of staff.

Observation: Observed blocks of exposed wood used to support pipe of pasta machine underneath. Operator informed that it is used temporarily until operator can get someone to affixed the pipe firmly.
Corrective Action(s): Remove the exposed wood blocks once the pipes has been properly affixed or seal exposed wood. All surfaces must be of easily cleanable and non-porous material. Corrected by: April 1, 2024.

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine spray bottles at 200ppm. 2-compartment sink available. Food preparation sink available. High-temperature dishwasher measured at 77.7C final rinse temperature.
Prep coolers, walk-in cooler, under counter cooler, and stand-up coolers measured at 4C or lower. Stand-up freezer, under counter freezer at back of house measured at -18C or lower. Temperature logs are well maintained. Temperature logs shows refrigeration and hot-holding units adheres to temperature health requirements.
Ice machine observed to be in sanitary condition. Ice scoops observed to be stored outside.
Food observed to be stored at least 6 inches off the floor. Dry storage area observed to be in sanitary condition. Exhaust hood vents observed to be in sanitary condition.
Mop sink observed to be in sanitary condition.
No signs of pests observed.

All violations in report#258367 have been addressed:
-Updated floorplan submitted.
-Splash guard at the hand washing sink physically installed next to the 2-compartment sink.
-Updated Corporation Documents submitted.

Overall, facility is well organized and clean.
