- Premises roasts coffee beans for distribution (retail and wholesale) and for sale at farmer's markets. Limited quantities of cold brew concentrate is prepared for service at farmer's markets.
- Premises maintained in a sanitary condition and organized with a flow from raw product to processed/finished product.
- All food items (bags/packages of coffee beans) stored in sanitary condition on shelving or pallets.
- Cold brew preparation area is situated near handwashing station and away from storage area of raw product (green coffee beans)
- Fridge for cold brew was 3.6C. Thermometer present for monitoring temperature.
- All sinks were supplied with hot and cold running water
- Handwashing station within processing area was supplied with liquid soap and paper towel
- Staff washroom was clean/maintained and supplied with liquid soap and paper towel
- Bleach present for sanitizing step for manual warewashing for food equipment. Test strips present for checking concentration.
- Signs posted at 3 compartment with manual warewashing steps. Plugs/stoppers present to fill sink for dishes to be fully immersed.
- Bleach solution was present in spray bottle (labelled to indicate contents) - concentration measured >200ppm chlorine. If used for food contact surfaces, dilute to 100-200ppm chlorine. Use test strips to check. Operator reported there are no surfaces (aside from food equipment) which food (beans, cold brew) come into direct contact with and bleach solution in spray bottle is used for general sanitation/disinfection purposes.

- Pest control contract in place with monthly service. Pest control devices present for monitoring/control.
