Observation (CORRECTED DURING INSPECTION): Sliced cucumbers, sliced tomatoes, and cooked noodles kept on kitchen counter measured to be at 19C, 20C, and 20C. Operator reports the three food items were pulled out of the prep cooler for the lunch rush 1 hour ago.
Corrective Action(s): Operator relocated the food items back into the prep cooler. Ensure potentially hazardous food are kept in conditions below 4C at all times.

Observation (CORRECTED DURING INSPECTION): 1) (THIS IS A REPEAT VIOLATION) Food (papad) observed to be kept on floor level
2) Knives and spatula observed to be kept between crevices behind the working station.
Corrective Action(s): 1) Operator relocated food items at the time of inspection. Ensure to keep food items at least 6 inches from floor level
2) Operator washed all kitchen utensils kept in the crevice at the time of inspection. Ensure to store kitchen utensils in a clean and sanitary manner.

Observation (CORRECTED DURING INSPECTION): Raw chicken and fish observed to be thawing in room temperature. Both food items surface temperature measured to be at 22C and the operator reports they have been thawing at room temperature for 1 hour.
Corrective Action(s): Operator relocated both food items into the walk in cooler at the time of inspection. Ensure to thaw food in the cooler or under cold running water.
