Observation:
- Debris build up observed inside the ice machine.
- Grime build up observed inside the mechanical dishwasher.
Corrective Action(s):
- Turn the ice machine off, empty all ice out, clean & sanitize all surface.
- Scrub off grime build up inside the dishwasher.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
- Low temperature dishwasher initially reached 35C max and rinse water measured 50ppm chlorine. This does not meet the minimum sanitizing / temperature standard.
Corrective Action(s):
- Operator had the booster turned off due to leak. Ensure dishwasher can reach 38C or above at this sanitizer level. After the booster was turnd on, the final rinse temperature reached 39.5C. Operator stated that a technician will be called to increase the sanitizer dispensing rate until the booster unit is fully repaired/replaced. Ensure final rinse water measures 100ppm chlorine when the water temperature is below 38C.

Observation (CORRECTED DURING INSPECTION):
- Observed frozen meat products out on the counter being thawed in room temperature.

- Ensure to thaw them under cold water, in the fridge or using microwave.

Observation:
- 1 dead mouse observed in sticky trap at the bar. Pest report from Jan 16, 2024 indicates mouse captures.
Corrective Action(s):
- Ensure to follow recommendations made by the professional pest control company. Structural concerns to be addressed. Deep cleaning of the facility is priority. Increase the pest control schedule to biweekly service.

- Grease build up observed underneath the cookline.
- Excessive grease & food debris build up around the low stove.
- Mouse droppings observed on the floor inside the kitchen & on top of the mechanical dishwasher.
- Food stain observed behind the small white cooler on the counter.
- Dust build up observed on the ceiling panels.
- Insulating material disintegrating on the right top corner of the ventilation unit.

- Clean areas noted above. Deep cleaning of the facility is required.
