Observation: Few rodent droppings seen behind 2 door cooler, corner beside washroom, and in storage area near freezers.
Corrective Action(s): Remove droppings and sanitize area. Sanitize all surfaces prior to use.
Place traps and monitor activity.
All food should be kept in pest proof containers with lids.

Routine Inspection
Coolers at 4 C or below.
Freezers ranged from -10 C to -18 C. *Freezers should be -18 C.
No hot holding at the time of inspection.
Hand sink equipped with hot/cold running water, liquid soap and single-use towels.
High temperature dishwasher registered a temperature of 71 C or above on the plate surface during the final rinse.
Surface sanitizer for kitchen use in spray bottle and registered at 200 ppm chlorine.
*Surface sanitizer for dining tables was greater than 200 ppm chlorine. Staff were instructed to remake a solution of 100-200 ppm chlorine.
Discussed proper cooling methods. Recommend obtaining a cooling wand to help with rapid cooling of hot potentially hazardous foods.
