Observation (CORRECTED DURING INSPECTION): Temperature of deli meats on the left side of the display cooler ranged between 8 and 10 degC. Air temperture of the cooler on this side was 10 degC. The sensor as per the computer for this end indicated a temperature of -1 degC.
Corrective Action(s): Discard all the meats in the display case (from salmon onwards) as discussed. Get the cooler repaired. Do not store any PHF's on this end of the cooler until it's fixed.

Observation (CORRECTED DURING INSPECTION): Roast chickens in the open display case were stored below 60 degC (ranged between 47-52 degC) even though the thermostat was as high as it could go.
Corrective Action(s): Remove the chickens from the display case and cool them for use as discussed. Get the unit repaired. Do not store foods in the display case until it can be maintained at or above 60 degC.

Observation: Access to the hand sink was blocked. The soap dispenser was empty.
Corrective Action(s): Hand sink must be accessible at all times. Refill the soap dispenser.

Observation: Temperature logs are not being maintained as per the Food Safety Plan. The last temperatures logged for or Wednesday, April 27th. Hot display case temperatures should be checked and recorded every 2 hours. Display cooler temperature should be checked and recorded twice daily.
Corrective Action(s): Start recording your cooler/hot holding temperatures as required.
