Observation (CORRECTED DURING INSPECTION): Vegetable slicer was dirty - significant amount of food debris accumulation present on blades and on/around entire slicer. Staff stated the slicer had not been used today.
Corrective Action(s): Slicer must be cleaned and sanitized after each use. Train staff on how to properly clean and sanitize the slicer, or REMOVE SLICER FROM FACILITY.
Staff cleaned and sanitized slicer at time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No surface sanitizer available for use at time of inspection.
Corrective Action(s): Staff prepared fresh sanitizer solution at time of inspection. 100 ppm chlorine (bleach) detected.
As previously discussed, sanitizer solution must be available for use DURING ALL HOURS OF OPERATION.
**Future non-compliance will result in further enforcement action(s).

Observation (CORRECTED DURING INSPECTION): Hand sink was obstructed - items were stored in front of hand sink.
No paper towels available at hand sink.
Corrective Action(s): As previously discussed, DO NOT STORE ANYTHING IN FRONT OF HAND SINK.
Paper towels and liquid soap must always be available at the hand sink.
Corrected at time of inspection.
**Future non-compliance will result in further enforcement action(s).

Observation: - Ventilation canopy requires cleaning again.
- Fryers require cleaning
- Walls and floors around fryers require cleaning
- Dry ingredient bins in frying area require cleaning and sanitizing
- Pooling water noted on floor in walk-in cooler and on floor by three-compartment sink.
Corrective Action(s): Clean and sanitize all areas noted above.
Deep cleaning must be done on a weekly basis.
Mop up any pooling water.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Two prep coolers were being repaired by service technician at the time of inspection. Both coolers were not storing any food - OK.
2) Paper towel dispenser at hand sink does not work.
Corrective Action(s): 1) Ensure coolers are capable of maintaining temepratures of 4C or colder before using to store food. Ensure each cooler is equipped with an accurate thermometer as well.
2) Install new paper towel dispenser (new dispenser in box avialable on-site).

Comments

- Hand sink was equipped with hot and cold running water and liquid soap. As noted above, paper towels also need to be available at the hand sink at all times.
- Three-compartment sink available for manual warewashing. Sink plugs available.
- Walk-in cooler and one prep cooler measured to be at 4C or colder
- Walk-in freezer measured to be at -22C
- Dry storage room satisfactory
- No signs of pest activity noted at time of inspection

**Major improvement in sanitation practices is required.
