Observation (CORRECTED DURING INSPECTION): Three bags of cooked chickpeas observed in chest freezer in black garbage bags. Staff voluntarily discarded the garbage bags with chickpeas during inspection.
Corrective Action(s): Do not store any food in black garbage bags as the bags are not food grade and contain chemicals which can leach into food and cause chemical contamination. Store all food in food grade containers to prevent contamination.

Observations:

1. Floor plans:
- Renovations are complete as per approved floor plan
- Back storage area has been renovated for non-potentially hazardous cookie production
- T-bar ceiling observed in place over cookie production area
- Wall directly to the left at the back is observed with large stainless steel counters for food storage purposes only
- Hand washing station has been installed in the back preparation area and is observed unobstructed, supplied with hot and cold running water, liquid soap and paper towel
- Two large ovens observed installed in back storage area
- 3-door glass cooler stored in the back (not in use)
- Large mixer and cookie depositor observed stored in the back of the restaurant
- Walls around the mop sink have been replaced with wipeable vinyl

2. Temperatures:
- Walk-in cooler at 3'C
- Chest freezers (X2) at -19'C
- Stand-up freezers (X2) at -19'C
- Preparation coolers measured at or below 4'C
- Hot-held pizza in warmer measured above 60'C
- Temperature logs are maintained - good!

3. Sanitation:
- General sanitation of premise is good during inspection
- Hand washing stations are supplied with hot and cold running water, liquid soap and paper towel
- Bleach sanitizer in spray bottles (X3) measured at 200 ppm chlorine concentration with test strip
- 3-compartment sink available with drain plugs and bleach
- No signs of pests during inspection
- Pest control company is contracted to complete monthly inspections

4. Storage:
- All food stored at least 6 inches off the floor
- All food observed covered
- Equipment stored in a sanitary manner
- Chemicals are stored away from food
- Dry stored ingredients observed stored in pest proof containers

5. Administration/staff:
- FOODSAFE Level 1 trained operator and staff available on site
- All staff observed wearing clean uniforms and hair nets
