Observation: Left hand prep cooler had an ambient temperature of 16-17 C and the internal temperature of sauces was 16-17 C. There was no food in the bottom of the cooler.
Corrective Action(s): Keep food fully submerged on ice until it is fixed. Ensure that it is repaired within one week.

Comments

-Ensure that temperature records and records for the dishwasher/ glasswasher are kept.
All other coolers, except for the one mentioned above were < 4 C.
The dishwasher had 50 ppm chlorine at the plate level.
Quats sanitizer solution was at 200 ppm.
No evidence of pests. Traps in place.
The walk in cooler was well organized.
Hand sinks supplied with hot and cold water, soap and paper towels.
General sanitation was satisfactory.
