Observation (CORRECTED DURING INSPECTION): Observation: Potentially hazardous foods containing dairy stored in display cooler measuring at 11C for more than 2 hours.
Health rationale: Potentially hazardous foods stored above 4C or below 60C are at risk of exponential microbial growth and/or toxin formation which can cause foodborne illness.
Corrective action: All potentially hazardous items (baked goods with dairy icing) were moved to prep cooler during time of inspection. Ensure cooler doors are closed properly to ensure cooler is able to adequately store potentially hazardous foods at 4C or less. Check temperatures of all coolers more frequently to ensure they can maintain 4C or less.

Observation: Observation: Brown coloured build up observed on interior surface of ice machine (REPEAT VIOLATION)
Health rationale: Ice can become potentially contaminated and cause food borne illness.
Corrective action: Staff began cleaning ice machine during time of inspection. Ice in machine was discarded during inspection. Ice machine should not be in use until it is kept in a sanitary manner and reduces risk of contamination. Ensure ice machine is cleaned and sanitized more often (as per manufacturer labelling) to prevent build up. Sign placed on machine "do not use".

Observation: Observation: Staff on premises does not have Foodsafe Level 1 certification.
Health rationale: Staff without adequate foodsafe training may not be aware of proper food handling/safety practices.
Corrective action: Ensure at least 1 staff member on premises has Foodsafe Level 1 training. In absence of owner at least 1 person must have Foodsafe Level 1 training (as per Food Premises Regulation). Foodsafe Level 1 training is available online and/or in person.

Observation (CORRECTED DURING INSPECTION): Observation: Handsink at back was not supplied with liquid soap.
Health rationale: Without liquid soap supplied at handsinks, food handlers are not able to adequately wash their hands using proper handwashing techniques. Food handlers can then potentially contaminate foods.
Corrective action: Liquid soap was supplied at handsink during time of inspection . Ensure all handwashing stations are adequately supplied with liquid soap, paper towel, hot and cold running water at all times to encourage proper handwashing techniques are required to remove potential pathogens and prevent contamination to foods.

Observation: Observation: Display cooler with baked goods and some potentially hazardous foods measured at 11C. Thermometer available inside cooler. Temperature log from this morning reads 2C.
Health rationale: Cooler storing potentially hazardous foods which are not able to maintain 4C or lower allow potential microbial growth and/or toxin formation in foods which can cause foodborne illness.
Corrective action: Repair/service cooler so that it can maintain 4C or lower. Do not store and potentially hazardous foods in this cooler until it is repaired and able to maintain 4C or lower. Recommend operator to check cooler temperatures more often to prevent foods being stored at temperatures 4C or higher for longer than 2 hours.

-Hot-held rice at 66C
-Glass display freezer at -18C
-Thermometers available in all cold-holding units.
-Temperature logs maintained.

2) Sanitation:
-General sanitation satisfactory during inspection.
-Bleach sanitizer bottle labelled and measured at 200ppm chlorine.
-Bleach sanitizer pail measured at 200ppm chlorine.
-Chemical dishwasher reached 100ppm chlorine residual at plate surface.
-Handsink at front service area adequately supplied with soap, paper towel, hot and cold running water.
-Sanitation log maintained.
-No signs of pests during inspection.
