Observation (CORRECTED DURING INSPECTION): Deli cooler observed to be at 10-12 deg C (just after lunch rush). However, temp. log showed that past few days cooler was reading 8-10 deg C. Yesterday's log was at 4-5 deg C.
Corrective Action(s): Remove all potentially hazardous foods and store in a cooler that maintains 4 deg C or colder. Monitor this cooler and service if needed. Do not store any potentially hazardous foods in this cooler until it can maintain 4 deg C or colder.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Dishwashing was being done at the two comp-sink in the kitchen and thus blocking accessibility to hand washing.
Corrective Action(s): Dishwashing must be done at the far end of the store (available sinks with drain boards) and sink in the kitchen is to be used for hand washing only.

Observation (CORRECTED DURING INSPECTION): Buns with ham on top were stored in display cabinet for more than two hours.
Corrective Action(s): Discard these potentially hazardous foods since they were stored at room temperature for more than two hours. Potentially hazardous foods must be stored in cooler (4 deg C or colder) if to be kept for more than two hours.

Observation: Deli cooler was above 4 deg C and temp. log showed that there were previous days that it had been at 6-10 deg C.
Corrective Action(s): Do not use until temperature is maintained at required temperature of 4 deg C or colder.

Bleach sanitizer measured 100 ppm.
Prep line cooler was at 3-4 deg C.
Ice cream display freezers were at -15 to -17 deg C
- dipper well functioning properly
Hot holding for soup was at 68 deg C.
Walk-in freezer was at -28 deg C.
Deep freezers in dry storage area was at -17 to -18 deg C.
Dry storage was clean and organized. All items were stored on pallets.
Store part:
Display cooler was at 3-4 deg C.
Display freezers were at -18 deg C.
Note:
*Jars of jams (cherry-raspberry jam, strawberry-rhubarb, bumbleberry, raspberry apple jam and spicy red pepper jelly) were found on the shelves labelled "Country fresh Birchwood"
- Provide information on where products were produced (Tower foods).
*Discussed from previous inspection with one of the owner future renovations. Discussed with manager the need to renovate to meet current requirement for ware washing.
*Small petting zoo outside of premises. Sign posted to wash hands after touching animals. Washrooms available outside of facility beside the petting zoo.
