Observation (CORRECTED DURING INSPECTION): 1. (Repeated violation) A drink stir spoon was stored in a room temperature water. Water was replaced with ice at this time.
2. The ice machine had accumulation of mould inside. The operator discarded ice and initiated cleaning process at this time.

Routine inspection conducted:
Hand washing station is fully equipped with hot and cold running water, liquid soap and paper towels.
General sanitation is adequate (little bit of cleaning required behind two cabinet freezers.
Coolers measured at 4C or less.
Freezers measured at -18C or less.
No sign of recent pest activity noted at this time. Monthly pest control in place.
Food contact surface sanitizer measured at 100-200 ppm chlorine as per test strips.

Notes:
Discussed about time tracking cooked pearls in syrup. The operator initiated time tracking on the pearl.
Reviewed Food Safety Plan (FSP) with the operator. Current version does not address pearl preparation. Provided a direction on how to complete FSP. Please submit a FSP for pearl to Kangmin.Gu@FraserHealth.ca in 2 weeks.
