Comments

-Under counter cooler was at 4C.
-Upright glass door cooler was at 4C.
-Double door metal cooler was at 4C.
-Single door metal cooler (raw chicken) was at 4C.
-Single door metal cooler (cooked chicken) was at 3C.
-Front display cooler (milk) was at 4C.
-Chest freezers ranged from -14C to -24C.
-Hot holding was greater than 60C.
-Chicken fried to greater than 74C.
-Cooked chicken cooled rapidly in the freezer, followed by cooling in the cooler unit was at 4C.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach was prepared and tested at 200ppm.
-Sanitizer pails were labelled and tested at 100ppm to 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General food storage practices good at the time of inspection. Raw meats stored separately from ready-to-eat foods. Foods stored off the ground and covered.
-Washroom supplied with hot and cold running water, liquid hand soap, and single use paper towels.
