Note: Sous-vide ribs being cooked during inspection, reviewed procedure with the Head Chef/Owner who stated that the ribs are done at 159F for 12 hours. BCCDC Sous-vide guideline allows for 158F for 0 sec so current procedure within guidelines. Guideline to be provided to owner via email tomorrow.
