Corrective Action(s): Discussed with owner. He has a UV light trap (away from food prep area). Sticky fly traps may also help to monitor the situation. In the meantime, ensure that all foods are always covered and protected from contamination and that garbage is taken out regularly.

Soap and paper towels available at handsink, discussed with owner about keeping paper towels in back handsink available and not just by the 2 compartment sink
Upright 2 door cooler: 3.8 deg C
Freezer: -19.2 deg C
Prep cooler: 3 deg C (bottom) and 4-5 deg C (top), ensure foods in inserts are cycled through every 2 hours if exposed to temperatures >4 deg C
Quat sanitizer in spray bottle at 200 ppm QUATS
High temperature achieved: 72 deg C on rinse cycle after 3rd attempt. Dishwasher needed time to warm up as it had not been run yet.
General sanitation good

Owner discussed plans to repaint floor. Ensure that floors are kept in an easy to clean/non-porous and sanitary condition.
