Corrective Action(s): 1. Replace missing light covers or buy light shields for each individual bulbs.
2. Store sliced meat protected in a container in the walk-in freezer.
3. Store all food products at least 6 inches off the floor.

Observation: Multiple food products (shrimps and lobsters) noted thawing on the countertop during the inspection.

Frozen food must be thawed using one of the acceptable methods such as thawing in the refrigerator or under cold running water.

Observation: Some fruit flies noted in the bar area by the soda gun machine.

Corrective Action(s): Contact the pest control company to assist with the fruit flies issue. Ensure the bar area maintains clean and sanitary to remove any food source for the fruit flies.

Observation: Mouse droppings noted below the prep sink in the back, in the dry storage area and below the meat slicer.
Date to be corrected by: March 15, 2022
Corrective Action(s): Sweep, wash, rinse and sanitize the above mentioned areas to determine if these are previous or recent mouse droppings. If mouse droppings reoccur, then this signifies a pest issue and the operator must contact their pest control company to assist with this pest issue.

Routine inspection conducted today -

- All hand wash sink stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
- All cold hold units were ≤ 4C.
- All freezer units were ≤ - 18C.
- Hot hold soup was above 60C.
- 3 containers of chlorine sanitizer were noted in the prep area - 100 PPM chlorine residual detected.
- High temperature dish machine was at 71C when measured at the plate level during the rinse cycle.
- Iodine dish machine in the bar area was at 25 PPM.
- Ice machine noted in sanitary condition.
- Operator just completed his FOODSAFE level 1 refresher course - email of course completion shown during the inspection.

- No signature required due to COVID-19.
- Report to be emailed to the operator.
