Observation: Pop syrup area has an accumulation (minor) of syrup in grout line along back wall. Noticed a couple of fruit flies (minor) in the area.
Corrective Action(s): Make sure staff pay attention to below and along the back wall of this area when cleaning. The syrup must be removed to ensure fly breeding habitat removed.

Comments

Make sure staff keep the clam shell lids on prep coolers closed when not prepping pizzas etc. shallower inserts are more subjected to ambient air influences which can impact product temperature controls.
Cooling units working well and measuring less than 4 C;
Hot holding above 60 C;
Freezing temps. less than -18 C;
Sanitizing all good - Dishwasher at 50 to 100 ppm Chlorine, quats in sani-buckets and spray bottles all around 200 ppm and glasswasher above 12.5 ppm iodine.

General sanitation good.
