Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher had no sanitizer at plate surface. Corrected during inspection - tube carrying the sanitizer was not placed properly while changing the sanitizer bucket. Was placed appropriately and achieved the minimum concentration of 50 ppm of chlorine at plate surface
Corrective Action(s): All dishware must be put through the dishwasher again to ensure all dishware is sanitized appropriately. Use test strips to measure the concentration of chlorine of dishwasher everyday to ensure that it is working properly.

Corrective Action(s): 1) All staff members must not consume food in the kitchen area as this may lead to potential contamination of food items that are meant for the public. Train all staff members to eat away from the kitchen area.

2) Food items that are not being used for immediate food preparation or cooled down should be covered to protect from contamination. You may use aluminum foil, tight fitting lids, or plastic wrap.

Observation: 1) Walk-in freezer inside the walk-in cooler was unorganized and dirty, making some parts of the walk-in freezer inaccessible

Corrective Action(s): 1) Clean and organize the walk-in freezer to ensure that it is entirely accessible

Routine Inspection

- All hand sinks had hot/cold water, liquid soap, and paper towel available
- All coolers were 4C or less
- All freezers were -18C or less
- High temperature dishwasher for pots and pans reached a temperature of 71C at plate surface
- Sanitizer buckets had 200 ppm of chlorine
- Food storage practices in dry storage area was good
- Exhaust hoods are cleaned every Tuesday
- A couple of flies observed in the dishwashing area, however fly control measures were in place and Orkin pest control come in once a month to conduct a pest control inspection
