Observation (CORRECTED DURING INSPECTION): Heavy build up of grease and dried soy sauce noticed on the white plastic cutting table on top of the preparation cooler.
Corrective Action(s): The plastic prep table/board must be removed every day for thorough scrubbing/cleaning in the sink and sanitizing with 100 ppm chlorine bleach solution. Clean/sanitize this prep table and all other chopping boards at least every 2-4 hours.

Observation: Build up of dirt, grease and food noticed on the following surfaces/equipment.
-Knife holders behind both wooden chopping blocks.
-Wall Behind the sink drain board and backsplash area.
-Floors behind and underneath the deep freezers and stainless steel preparation table.
-Drip tray underneath the deep fryers
-Floor undereath the woks ( soot and coal dust noticed)
-Fan covers in walk-in cooler
-Floor underneath and behind the commercial mixer
-Exterior surfaces of the deep freezer across from the woks.
-Wooden painted table above the deep freezer
Corrective Action(s): You must clean and sanitize the above surfaces and equipment thoroughly to remove build up.
This will also discourage pests such as rodents and cockroaches. ( By November 15, 2019).

* Recommended changing the old deteriorating wooden cover for the deep freezer with non-absorbent and washable surfaces such as stainless steel or plastic board.( ASAP).
* Replace all worn out tube lights in the kitchen. ( Nov. 25, 2019)
* Replace mouldy/dirty silicone caulking behind the triple wash sink.(Nov. 25, 2019)
