Observation (CORRECTED DURING INSPECTION): Dishwasher is not being used. Operator is only manually washing -only soap and water being used.

-Operator is using alcohol as a sanitizer for food contact surfaces
Corrective Action(s): -USE YOUR HIGH TEMPERATURE DISHWASHER.

Manual washing is only to be used if the dishwasher is down and being repaired.
For Manual Washing you must be
Step 1: washing with soap
Step 2: rinse thoroughly
Step 3: sanitize with bleach >100ppm then air dry

-You are approved for the Lysol Wipes or Bleach Sanitizer solution at >100ppm residual -keep the rinsed towels in the bleach solution
