Observation (CORRECTED DURING INSPECTION): Noted a large pot of soup in the "Ace-it" walk in cooler. Internal temperature of the soup was measured to be @ 30oC. The soup was put in the cooler overnight.
Corrective Action(s): This is not an acceptable cooling process. The soup must be cooled down to 4oC within 6 hours. Use an ice water bath and/or an ice wand to bring down the temperature enough so that the soup can be cooled quickly in the walk in cooler. Also, divide the content into smaller pots to bring down temperature faster. The soup was discarded during the inspection.

Corrective Action(s): Repair and replace the above noted areas. Given 2 weeks to be repaired. Contact the Health Department once the repair is complete.
