Observation (CORRECTED DURING INSPECTION): Old food debris observed underneath salad prep cooler and opposite upright cooler.

Observation: Kitchen cooler drawers operating at > 4°C internal food temperature. Salad prep cooler, too.
Corrective Action(s): Technician had been called to service the coolers. Coolers must operate at less than or equal to 4°C/40°F. Ensure that all coolers have working thermometers inside. To be corrected today.

Observation: Lights very dim in the kitchen. One light bulb burnt out.
Corrective Action(s): Increase brightness in kitchen. Kitchen must be adequately lit for cooking and cleaning purposes. To be corrected within one week.

- Some violations remained. (No correction).

*As per last inspection, operator and at least one employee per shift must have FoodSafe Level 1 or equivalent. FoodSafe certificates expire every five years. Very old FoodSafe certificates (without expiry dates) have officially expired. To be corrected within one month.*

Other Observations:
-Cloths soaking in bleach at 100ppm+. (Use 1/2 teaspoon per litre of bleach to make 100ppm). Please ensure that ALL staff are using sanitizer, as required.
