Observation (CORRECTED DURING INSPECTION): Pasta was left on the stove measured with an internal temperature of 26C. Chef stated the pasta was made 1.25 hours ago and being served to the children on site. The process of serving my take a time up to 2 hours.
Corrective Action(s): Discussed the food safety plan with the chef. Due to the long serving time in between, chef needs to hot hold the pasta on the stove at a temperature of 60C or higher during the serving time.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer measured with a concentration of over 200 ppm.
Corrective Action(s): Dilute the bleach sanitizer concentration to 100-200 ppm. Higher concentration of bleach is not required to sanitize food contact surfaces and.

Routine inspection:
- Stand-up cooler at 4C.
- Chest freezer at -18C.
- Hand washing station provided with hot/cold running water, liquid soap and single use paper towels.
- High temperature dishwasher registered 72.C at the plate level.
- General sanitation satisfactory.
- No pest activities observed at the time.
