- Operator has proposed to designate one compartment of the three-compartment sink (most left sink) as a food preparation sink for washing fruits and vegetables. Minimal fruit and vegetable washing and cutting as most produce is purchased washed and pre-cut.
- The Food Safety Plan and Sanitation Plan has been updated to reflect changes. Keep a copy of updated documents onsite. Review changes with employees and label sinks/ provide signs.
- Continue to monitor for pest activity. Ensure that any new holes/ gaps/ cracks caused by construction in adjacent properties are filled to prevent potential pest entry. Ensure all areas are accessible for pest control service. Follow all recommendations provided by your pest control service technician.
