Comments

Routine inspection of food premises conducted. Observations noted below:
- Premises and equipment maintained in a sanitary condition. Meat slicer free from food debris and Operator reported it is sanitized after each use.
- Handsinks in food preparation and service areas and in staff washroom supplied with liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder) and have thermometers present
- Refrigerated display units 4C
- 2 door reach in cooler 3C
- Freezers were maintaining product in a frozen state
- Chest freezer -25C
- Small chest freezer -22C
- 2 door reach in -21C
- Observed shepherd's pie and cabbage rolls cooling at room temperature at time of the inspection. Products were in shallow trays/pans to ensure efficient cooling. Operator reported product to be transferred to cooler within 20-30min to meet food safe cooling parameters (from 60C to 20C within 2 hours max and from 20C to 4C within 4 hours max.)
- Probe thermometer present for checking internal cook temperatures and for monitoring cooling temperatures.
- Manual warewashing completed in 2 compartment sink. Operator knowledgeable about manual warewashing procedures: wash, rinse sanitize, air dry. Sign posted and bleach present for sanitizing step.
- Bleach sanitizer solution present in spray bottle for sanitizing food contact surfaces and meat slicer. Concentration measured >200ppm chlorine. Dilute to 100-200ppm chlorine.
- No signs of pests noted at time of the inspection. Operator reported pest control contract in place via the building/landlord and pest proofing of the building was completed to address entrance points and harbourage areas since the last routine inspection.
- Operator present and has valid Foodsafe level 1 certificate. Refresher course completed in 2018.
- Health permit posted. Valid decal affixed to permit.
