Observation (CORRECTED DURING INSPECTION): Back-up container of gravy was at 33C.
Corrective Action(s): Potentially hazardous foods must be stored above 60C or below 4C to prevent potential growth of pathogens and/or the formation of toxins. Gravy was moved to the walk-in cooler at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Both sanitizer pails had no detectable Quats sanitizer.
Corrective Action(s): Quats sanitizer must be maintained at 200ppm to properly sanitize food contact surfaces. Sanitizer pails need to be checked and changed as needed, especially during times of heavy use. Sanitizers were refilled and tested at 200ppm at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Cellphone was stored on a burger wrapper.
Corrective Action(s): Ensure phones and personal belongings are stored in designated area. Burger wrapper was discarded at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Main prep area handwash station was blocked off due to a leaking pipe.
Corrective Action(s): Handwash stations must be accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Plumber has been contacted and obstruction has been removed and bucket placed under the sink to collect leaking water.

Corrective Action(s): Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods. Scoops were relocated at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Both prep coolers were at 4C (top and bottom).
-Shake cooler was at 4C.
-Under cooler was at 4C.
-Upright freezer was at -14C.
-Chest freezer was at -18C.
-Burgers were cooked to greater than 74C.
-Temperatures are checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Slicer and dicer were generally found to be clean and sanitary.
-Blender containers sanitized every 2 to 3 orders.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 equivalence valid until June 23, 2028.
