315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: A thermometer was not present inside the domestic cooler and the domestic freezer. A probe thermometer was not available on-site.
Corrective Action(s): Obtain thermometers for the cooler and freezer so that it can be monitored that the cooler temperature is 4 degrees C (40 degrees F) or less and the freezer temperature is -18 degrees C (0 degrees F) or less. Obtain a probe thermometer; correct before December 3, 2016.

Comments

No food service was occurring at the time of inspection. Food in the cooler and freezer mostly belonged to staff. It was mentioned that the kitchen is usually used for birthday parties where cake refrigerated, sliced and then served to children.
Cooler temperature was 1.1 degrees C (4 degrees C or less).
Freezer temperature was -19 degrees C (-18 degrees C or less).
100 ppm chlorine sanitizer (1/2 teaspoon bleach per L of water) was set up in the spray bottle during the inspection and it was labelled. It was mentioned that paper towels are used to wipe surfaces after they have been sprayed with the bleach water.
A new domestic dishwasher was available on-site with a "sanitize" button.
No signs of recent pest activity were observed on-site.
The temporary permit application was revised with the person in charge at the time of inspection.
