Observation (CORRECTED DURING INSPECTION): Rags in bleach sanitizing bucket contain 0 ppm chlorine residual.
Corrective Action(s): Bleach was added to the sanitizing bucket to yield a 200 ppm chlorine residual solution. Ensure that the bucket is routinely replenished with bleach for proper sanitizing of food contact surfaces, and to prevent bacteria from growing on the rags.

Observation (CORRECTED DURING INSPECTION): Back door wide open at time of inspection.
Corrective Action(s): Back door was closed at request of EHO. Ensure that the back door remains closed, or install a screen door, to keep pests from entering the facility through the back.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: One light panel is missing, explosing bare fluorescent tubes.
Corrective Action(s): Replace the light panel. The suspended ceiling must be easily cleanable and must not have any exposed light tubes. Breakage of light tubes could result in contamination of food.

Comments

Routine inspection conducted. Facility maintained in very good sanitary condition. The following observations were made:

1. Temperatures
- Front display beverage cooler at 3C
- Walk-in cooler at 4C
- Prep cooler at 3C **NOTE: As observed in previous inspection report BCUD-AVJVQL, DOUBLE STACKING is still being observed with cooling wells. Although turnover is high, REFRAIN from double stacking as it prevents cold air from reaching food items and exposes food to elevated temperatures. Owner has informed all staff to stop double stacking.
- Walk-in freezer at -18C
- No hot-holding performed on-site
- Temperature logs up-to-date

2. Hygiene and Sanitizing
- Handwash stations in kitchen and washroom adequately stocked with hot/cold running water, liquid soap, and hand dryers
- Bleach sanitizer spray bottle contains 200 ppm chlorine residual
- 3-compartment sink present with drain plugs. Operator aware of how to make a 50-100 ppm sanitizing solution in third compartment
- Potato presser and dough mixer in good sanitary condition

3. Storage
- All food items are stored at least 6" off floor - good
- Bulk storage items, including chili and spices, are inside pest-proof containers with tight-fitting lids. Note: One container is starting to crack - replace the container before it gets larger
- Cleaned and sanitized cambro containers and utensils are stored securely on overhead shelving

4. Pest Control
- Operator hires professional pest control company to conduct monthly audits. Last inspection on Aug 3, 2018 did not note any pests on-site; however, ceiling baits were consumed. Mechanical traps did not contain any rodents
- No recent signs of pest activity were observed at time of inspection

5. Administrative
- Owner and staff on-site have FoodSafe 1 (Expiry: 2023)
- Permit posted and up-to-date

6. Recommendations
- Place a tile over exposed wall underneath the 3-compartment sink to prevent entry of pests
- Some ceiling tiles are starting to bend / lose integrity. Replace ceiling tiles as needed

  • Food with the sole source(s) as naturally occurring trans fat (i.e. beef, sheep, lamb, bison and dairy products)
