Observation (CORRECTED DURING INSPECTION): 0 ppm QUATS sanitizer was available in the sanitizer pail near the front service area. 0 ppm chlorine sanitizer was in this same container as well. Staff member demonstrated that they first place hot water into the container and then dispense the QUATS sanitizer from the dispenser.
Corrective Action(s): The QUATS sanitizer is already setup at 200 ppm from the dispenser and does not require further dilution. The added hot water may be contributing to lowering its' concentration or dissipating it at a quicker rate. Make sure 200 ppm QUATS is available to sanitize surfaces and use the QUATS test strips on-site to monitor its' concentration throughout the day. Staff member setup 200 ppm QUATS sanitizer in the sanitizer pail directly from the dispenser and stated that they would not dilute it further.

Observation: Prep. cooler was at 5.6-6 degrees C at the time of inspection. Technician over phone and Operator on shift stated that it still requires further repair.
Corrective Action(s): Repair/re-service the fridge so that it is maintained at or below 4 degrees C; Correct within 1 week. Do not store any cold potentially hazardous food inside it until it is maintained at or below 4 degrees C; Effective immediately. Contact the district Environmental Health Officer for a follow up inspection once the fridge is repaired to maintain an internal ambient temperature of 4 degrees C or less.
