Observation (CORRECTED DURING INSPECTION): A 4 L container of milk was stored at 7.6C in the bar reach-in cooler.
Corrective Action(s): **Issue corrected at the time of inspection** The 4 L container of milk was discarded by a staff member.

209 - Food not protected from contamination [s. 12(a)]
Observation: More than 200 PPM chlorine residual detected in the bleach sanitizer containers set-up in the prep area.
Corrective Action(s): Dilute the bleach sanitizer containers (2 tsp of bleach per 1 L water) for 100 - 200 PPM chlorine residual for the optimal concentration for use as a food-grade sanitizer on food contact surfaces.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Sanitary condition has definitely improved. Most areas noted unsanitary during the last routine inspection is now noted cleaned. However, the following areas still needs attention:
- Food soil noted on the faucet handles of the back of house handwash station - by back door.
- Buildup noted on the baseboard and floor below the walk-in cooler.
- Black organic buildup noted in the reach-in cooler below the grill.
Corrective Action(s): Areas noted requiring sanitary attention was pointed out to the cleaning staff for cleaning. Please clean and sanitize the abovementioned areas and maintain in a sanitary condition.

Observation: Bar reach-in cooler noted with an ambient temperature of 8.1C.
Corrective Action(s): The only cold potentially hazardous food stored in this cooler was a 4L container of milk - discarded during the inspection. Please have someone service this cooler again. If cooler cannot be fixed, consider not storing any cold potentially hazardous items in this unit. Alternatively, replace the unit.

Observation: 1. Caulking still missing behind the 3-compartment sink in the dishwashing area.
2. Rust still noted on the shelves in the walk-in cooler.
Corrective Action(s): 1. Pointed out where caulking was needed to the cleaning staff to show the operator when he is in. Replace missing caulking.
2. Spoke to operator regarding the shelves. Will be looking into quotes to replace shelves.

Follow-up inspection conducted for report #KLAI-CW2SWY
Kitchen prep reach-in cooler has now been fixed and was noted with an ambient temperature of -1.0C.
Hot hold units were holding food well above 60.0C at the time of inspection.
No utensils were improperly stored in an unsanitary condition, in hard to clean places, during the inspection.
No food stored on the floor in the walk-in cooler.
Did not see dead animals/ pests in the trap below the bulk food containers.
General cleanliness has improved.

Violations that require follow-up for the next routine inspection has been communicated to the operator over the phone during the inspection.
